-500g mince
-6 slices of pancetta
-1 onion diced
-2 garlic cloves
-1 carrot grated
-1/2 head broccoli chopped
-1/3 red capsicum diced
-100g green beans chopped
-100g mushrooms sliced
-Large handful of baby spinach
-500g Macro organic Bolognaise pasta sauce, or other
-Salt to taste
-1/2 tsp. dried basil
-Parsley garnish
-Parmesan cheese
-Cooked whole meal or gluten free pasta
Heat oil in saucepan, fry onion till soft, then add garlic. Stir for 1-2 mins.
Add mince, pancetta or bacon and fry until brown. Add vegetables, stir through. Add tomato paste, stir through, lower heat, lid on and simmer for 15-20 mins.
Add salt and basil, stir through for 2-3 mins, and serve.
Garnish with chopped parsley and Parmesan cheese.
-Serve with either whole meal/gluten free pasta, zucchini strips or rocket.
