1 cup soaked white quinoa, rinsed, drained
¼ cup rolled or cooked rice
1 1/2 cups milk of choice
1/2 cup fresh apple chopped
1/3 cup dried goji or Inca berries
1 tablespoons raw honey
1/3 cup pistachio kernels, coarsely chopped
Combine quinoa and 4 cups cold water in a saucepan over medium-high heat. Bring to the boil. Reduce heat to low. Cook, covered, for 10-15 minutes.
Stir in rice, half the milk, apple and goji berries. Cook, covered, for 5 minutes or until quinoa and rice are tender.
Spoon porridge into bowls. Sprinkle with pistachios. Drizzle with honey. Add extra milk and Serve.
